Winemaking Notes
The vinification process of this wine involves meticulous hand selection of clusters, followed by destemming and further berry sorting by hand. The berries then undergo gentle roll crushing. Before fermentation, there is a five-day cold maceration period at 10°C. The alcohol fermentation takes place in stainless steel tanks over a period of 15-17 days, maintained at a controlled temperature range of 24-27°C. During this phase, three open pump-overs are conducted daily. The selected yeast used is Saccharomyces Cerevisae (Bayanus). After fermentation, the wine is subjected to a post-fermentation maceration for an additional five days. It is then racked directly to barrels for 100% natural malolactic fermentation.
In terms of aging, the wine is matured for 16 months. Half of the wine is aged in medium toast oak barrels (comprising 50% new and 50% once used barrels), while the remaining 50% is aged in second use foudres. The bottling date was in November 2019, and it underwent a bottle aging process for 12 months.
Vineyard Notes
The vineyard was planted in 1912, located on the north terrace of the Mendoza River at an altitude of 983 m.a.s.l – 3225 f.a.s.l – in, Luján de Cuyo. The Soil is loamy sand with horizontal bands of clay loam. Due to its alluvial formation, gravels appear beginning at depths of 90 cm. The diameter of the rounded rocks varies between 2 and 30 cm. Twenty hectares have been planted under double Guyot vine training, only four of these hectares are dedicated to the production of Trivento Eolo Malbec. They are irrigated using flood irrigation (furrow) with water channeled from the Mendoza River. Mendoza's climate is characterized by being arid, rainfall is scarce, with an average annual rainfall of 200mm. Temperatures have a significant daily oscillation which favors the development of the ripeness of the grape, especially its phenolic compounds.Harvest Notes
This was a normal growing season, with typically scarce rains (216 mm total), similar to regional annual averages. Winter moved forward with temperature minimums 5 C lower than the previous season. The month of June was colder in particular, reaching -9.3 C compared to -4 C the previous year. The overall moderate cold temperatures of winter led to an orderly phenological progression. Spring was cool with lower humidity and an average temperature of 14 C, 3 C less than average. Budbreak began the second week of October. In summer, maximum temperatures reached 35.4 C. Lots of sunshine and dry conditions in a typical Mendoza summer. Deft irrigation management provided the needs of vines and ensured berry quality. Ripening commenced slowly, but accelerated toward the end of March. A warm and dry Autumn and excellent vineyard health allowed for harvest by parcel without haste, but with precision. The season came to a close with the warm, dry Autumn and a healthy vineyard. Harvest by hand to plastic 15 kg crates from March 16-22, 2018, in six stages.Technical Details
